Words cannot express my love for potatoes these days. Maybe it’s because the weather has been a bit cloudy that my body is being fooled into thinking its fall and thinking it’s ok to just keep poppin’ tots. But why not?! They’re too hot not to trot.

I wanted to share my latest potato obsession with you. First I must start by saying – THANK YOU TRADER JOE’S! Joe, I’ve never met you but if I ever do, I would give you the biggest hug! Look at how adorable their tiny potatoes are!
For $2.49 a bag you can have a lovely snack or side dish.
Here’s how I bake them. It’s way easy.
Preheat oven to 405 degrees
Rinse your tiny tots
Plop them on a cooking sheet
Add 1-2 tbspn coconut oil
Add a dash or Celtic Sea Salt
Sprinkle rosemary (as much as you want)
Put in oven for about 20 minutes.
Then pop em like they’re hot!
I will be poppin’ these tiny tots with some organic black beans (simply heat over the stove), and cooked broccoli slaw (cooked on a pan with some coconut oil and Celtic Sea Salt.) If I’m feeling frisky, I may add some sriracha sauce. All from good ol’ Trader Joe’s.
